Hare Rosé Sparkling from Ontario reveals delicate strawberry, white peach, brioche and a hint of citrus zest. It's off-dry and light to medium-bodied with persistent fine bubbles and bright acidity that balances the gentle sweetness through a crisp, refreshing finish. This sparkling wine is made using Méthode Traditionnelle or the traditional method of the second fermentation in the bottle, just as they do in the Champagne region. Serve it well-chilled alongside sweet and spicy shrimp stir-fry where the wine's slight sweetness tames the heat while the bubbles and acidity cut through the richness, or pair it with a charcuterie board featuring prosciutto and aged cheddar where the wine's effervescence and fruity character complement the salty, savory elements. Winemaker Thomas Green crafts this unique blend of Cabernet Franc and Vidal Blanc from sustainably-farmed grapes grown in Ontario's cool climate, where the Cabernet Franc provides structure and berry notes while the Vidal adds aromatic lift and balanced acidity.
