The Glenelly Glass Collection Cabernet Sauvignon from Stellenbosch W.O. is a medium-bodied, elegantly structured red aged for 12 months in 300-litre French oak barrels, opening with a refined nose of dark wild berries, dried sage and a whisper of pencil shaving, while the palate delivers focused flavors of ripe plum, crushed black cherry and a subtle thread of dried tobacco, all framed by pliant, finely grained tannins and a long, polished finish. It is dry and beautifully composed, so serve it slightly below room temperature and enjoy now through 2045. Winemaker Luke O'Cuinneagain, who trained at top estates in Alsace, Bordeaux and Screaming Eagle in California before joining Glenelly, brings a rare Franco-African sensibility to his craft, letting fruit lead the wine rather than wood. The estate was founded in 2003 by the formidable May-Eliane de Lencquesaing, who walked away from three decades as owner of the legendary Bordeaux Second Growth Chateau Pichon Longueville Comtesse de Lalande at the age of 78 to start an entirely new wine adventure in South Africa, and her personal collection of antique glassware, which once ranked among the largest in Europe, inspired the entire Glass Collection range. Pour it alongside a slow-braised beef blade roast with red wine and root vegetables, where the wine's dark fruit and earthy depth are a natural match for the richness of the dish, or serve it with a classic tourtiere spiced with clove and allspice for a French-Canadian pairing that feels surprisingly at home with this Bordeaux-spirited Stellenbosch beauty.
