Gillardi Maestra Dogliani is a characterful, unoaked 100% Dolcetto from one of Dogliani's most fascinating family estates, where the Gillardi family has farmed organically on the Corsaletto hill since the early 1920s, crafting wines that are an honest and vivid expression of this underrated Piedmontese appellation. The wine opens with an appealing nose of crushed wild strawberry, pomegranate, dried hibiscus, and a whisper of dark cocoa, all framed by a lively, earthy undercurrent that connects it firmly to its clay-limestone terroir. On the palate it is medium-bodied, bone dry, and refreshingly taut, with grippy, food-friendly tannins, snappy acidity, and a clean, fruit-forward finish that makes it wonderfully versatile at the table. Serve it slightly below room temperature and enjoy through 2032. Winemaker Giacolino Gillardi, who trained as an oenologist at the school in Alba and began estate bottling in 1980, is also famous for a remarkable piece of viticultural history: in 1993 he planted the very first Syrah in all of Piedmont, using cuttings sourced directly from legendary Cornas producer Auguste Clape in the Northern Rhone, a bold experiment that became one of Italy's most celebrated Syrahs.

Food pairings: porcini mushroom and sausage pasta with Parmigiano, roasted chicken thighs with olives and tomatoes, charcuterie board with salami, aged cheese and pickled vegetables.
