Flavium Mencía D.O. Bierzo from northwest Spain is a medium-to-full-bodied, bone-dry red with aromas of dried blueberry, pressed violet, cracked slate, and a thread of graphite from the region's distinctive schist soils. On the palate it's plush yet focused, with stewed plum, a lick of tobacco leaf, tangy pomegranate, and a long finish of bright acidity and supple tannins. Owner and winemaker Víctor Robla founded Vinos de Arganza in 2000, working alongside his wife Ángeles Varela, whose family has been making wine in Bierzo since the 15th century. The grapes for this wine come from vines over 50 years old, aged for 14 months in oak before release. Cellar it through 2029 or open it now. It's a natural match for a pork roast with roasted garlic and herbs, where the wine's tangy acidity lifts the richness of the meat, or try it with a sharp aged Manchego, where the slate-driven minerality plays beautifully against the nutty, crystalline cheese.
