El Enemigo Semillon from Agrelo is a dry, medium-bodied white wine crafted by winemaker Alejandro Vigil and historian-winegrower Adrianna Catena, revealing lovely aromas of Asian pears, saline citrus and golden apple with concentrated nectarine flavors and striking saltiness on the palate, sourced from a historic vineyard and aged one year under flor. Serve it chilled with grilled shrimp with mango salsa, where the wine's bright, concentrated character and saline quality complement the sweet shellfish while its incisive acidity cuts through the richness, or pair it with pan-seared sea bass with lemon butter as the wine's citrus, flinty notes echo the citrus while standing up to the rich sauce. Alejandro Vigil serves as chief winemaker at Catena Zapata, Argentina's most prestigious winery, and created El Enemigo (meaning "The Enemy") in 2007 with Adrianna Catena to showcase unconventional blends and forgotten varieties like Semillon using innovative techniques including flor aging borrowed from sherry production. This saline, exceptional wine can be enjoyed now or cellared through 2030.
