Dominio Fournier Ribera del Duero is a powerful, full-bodied red offering aromas of ripe black cherry, toasted spice, and hints of dried sage. It's dry with velvety tannins and vibrant acidity. Serve it slightly below room temperature with grilled lamb chops as the wine's rich concentration and mineral depth will enhance the meat's savory richness beautifully, or pair it with aged Manchego cheese where the wine's complex layers and smooth finish will complement the cheese's nutty, crystalline texture perfectly. Winemaker Marian Santamaría, whose career began among these very vineyards over fifteen years ago before gaining experience in Toro, Rueda, and other prestigious Spanish regions, returned to lead Dominio Fournier with a mission to craft the finest wines in Ribera del Duero. Located in the Milla Escondida along a natural meander of the Duero River, the estate's sixty-year-old vineyards sit on soil covered with river pebbles that restrict vigor and concentrate flavors, and the winery employs innovative dry ice maceration before fermentation to extract the sweetest, most aromatic tannins. Enjoy now or cellar for 3-5 years.
