Domaine Verret Saint-Bris Burgundy Sauvignon Blanc is a genuinely singular wine from one of France's most intriguing and little-known appellations, offering a nose of ripe yellow grapefruit, warm golden pear, white blossom, a whisper of gooseberry, and a pronounced, stony saline minerality that immediately announces its cool northern Burgundian origins. It is dry, crisp, and elegantly structured, with a focused, zesty acidity, a beautifully rounded mid-palate weight from the 40% portion aged in oak, and a long, clean finish that lingers with a subtle chalky bite that is entirely its own. Winemaker Bruno Verret, who returned to his family's centuries-old estate in 1995 after formative experiences in Bordeaux, Cognac, Savoie, Chablis, and Australia, deliberately harvests his Sauvignon grapes last among all his varieties, allowing them to develop deeper, rounder aromas rather than the sharp green edge typical of the variety. The estate's home appellation of Saint-Bris, formally recognised only in 2003, holds the remarkable distinction of being the sole appellation in all of Burgundy permitted to produce Sauvignon Blanc, making every bottle from this address a genuine curiosity in the world's most Chardonnay-obsessed wine region. The Verret family has cultivated these vines since approximately 1750, giving this wine a lineage few producers anywhere can match. Serve it well chilled alongside steamed mussels in a white wine and shallot broth, where the wine's saline minerality and citrus brightness are a natural partner, or with a Niçoise salad of tuna, green beans, and olives for a lively, sun-filled pairing. Drink it over the next two to three years.
