The Domaine Les Escondudes Châteauneuf-du-Pape Rhône A.O.C. is a pure 100% Grenache from a tucked-away hidden valley parcel in Bédarrides, fermented with native yeasts over 20 days in stainless steel and matured entirely in concrete tanks with zero wood influence, allowing the terroir of sun-warmed rounded galets and clay subsoils to speak with exceptional clarity and purity. It opens with an expressive nose of ripe pomegranate, dried wild thyme and a whisper of crushed violet, while the medium-to-full-bodied palate delivers bright flavors of macerated red cherry, warm fig and a savory ribbon of sun-dried garrigue herbs, all carried by silky, polished tannins and a long, vibrant finish with a lively streak of freshness woven throughout. It is bone dry and beautifully poised, so serve it slightly below room temperature and enjoy now through 2033. Winemaker Thierry Ferlay, who honed his craft in Australia's renowned Rutherglen region as well as at leading Rhône estates, oversees this special parcel which sits right next door to the iconic Vieux Télégraphe, one of Châteauneuf-du-Pape's most celebrated estates. The estate was acquired by Cellier des Princes in 2017, a leading cooperative founded in 1924 whose member growers played a pivotal role in the creation of France's very first A.O.C. appellation for Châteauneuf-du-Pape in 1936, one of the most consequential moments in the entire history of French wine. Pour it alongside a slow-roasted leg of lamb fragrant with herbes de Provence, where the wine's garrigue notes and dark fruit echo the savory depth of the dish, or serve it with a roasted pheasant stuffed with figs and fresh thyme, letting the wine's bright acidity and silky texture weave beautifully through every elegant bite.

Châteauneuf-Du-Pape food pairings: roast leg of lamb, turkey, pheasant, veal Porterhouse.
