Domaine du Fournier Signargues Côtes du Rhône-Villages is an elegant, medium to full-bodied red offering aromas of ripe black cherry, fresh violets, and hints of Mediterranean herbs. It's dry with polished tannins and vibrant acidity. Serve it slightly below room temperature with grilled lamb chops as the wine's silky texture and dark fruit concentration will enhance the meat's savory richness beautifully, or pair it with aged sheep's milk cheese where the wine's mineral depth and smooth finish will complement the cheese's nutty complexity perfectly. Winemaker Karine Ogier, who inherited the position from her father at Les Vignerons du Castelas cooperative, practices sustainable viticulture using natural fertilizers and employing integrated farm management techniques across the estate's vineyards. Founded in 1956, this cooperative takes its name from a Romanesque chapel overlooking Rochefort-du-Gard and unites 45 growers farming 450 hectares, including 100 hectares dedicated exclusively to the Signargues appellation, which was officially recognized in 2005 and spans four historic villages.
