Domaine du Beauregard's Cuvée Origine Bourgogne Rouge is a silky, medium-bodied Pinot Noir that opens with a lifted perfume of crushed wild raspberry, dried cherry, and a whisper of forest floor earthiness, with a subtle undercurrent of warm spice and dried herbs that adds intrigue. It's dry, with supple, well-knit tannins and lively acidity that give it a graceful, lingering finish. Serve it slightly below room temperature to let its aromatic complexity shine, as it has the structure to reward cellaring through 2034. At the helm of this fifth-generation estate in Saint Sernin du Plain are siblings Stéphanie and Jérôme Dépernon, whose family first planted roots in these Burgundian soils back in 1810, making this one of the older continuously family-run domaines in the southern Côte de Beaune.

Pinot Noir food pairings: roast chicken with tarragon pan jus, pan-seared duck breast with cherry reduction, mushroom and lentil ragout.
