Domaine de Pouilly's Au Clos Premier Cru Pouilly-Fuissé from Burgundy is a complex, medium to full-bodied white wine offering notes of crushed stone, toasted hazelnut, tangerine, golden pineapple and white peach. This dry wine displays delicate and distinguished character that will continue to develop over the next eight years. Serve it chilled with oysters on the half shell as the wine's stony minerality complements the briny shellfish, or pair it with cheese fondue where the wine's opulent texture balances the melted cheese. Winemaker Renaud Sornay crafts this impressive wine standing on fossiliferous limestone identical to that found in the Côte d'Or, with the Bajocian escarpments of Solutré and Vergisson owing their dramatic profile to hard fossil corals resisting erosion. The wine reveals fern, acacia, toasted breadcrumb, buttered brioche and honeycomb complexity alongside ripe melon and charred oak brilliance. This expressive, rich Chardonnay represents excellent quality and will drink beautifully through 2034.

Pouilly Fuissé food pairings: oysters on the half shell, oyster poor boy sammies, cheese fondue.
