The wine community seems slightly divided on an accurate description of how this wine was produced. It seems to have been made by allowing bottle fermentation and evacuation of the dead yeast lees by tank transfer. That would make it akin to abridged traditional method wine (called the transfer method), but also ancestrale style. It is lower in alcohol, like an ancestrale method (or col fondo, as it is called in Italy). It shares the same zesty character as other wines made this way. It is only 9% and it is tart and fruity. Not a lot of sweetness here, either.
Decently persistent bubbles (more like a transfer or traditional method in sparkliness). More aggressive than Charmat wines, like Prosecco.
Obviously, it is deepy purply-pink. It is made with Gamay Noir harvested from vineyards spanning between the Fleurie and Morgon crus. This means it is quite aromatic and concentrated.
The aromas smell a lot of tart grape candy, violets, rooibos tea, black cherry, lavender, and subtle chicory.
Really lip-smacking and fresh. Replays of raspberries and table grapes. Smoke, leather, pipe tobacco, anise, and damson plum. Virtually no tannin. Tastes somewhat carbonic, as though the initial fermentation blocked malolactic like Beaujolais nouveau. The grapes amd producer are known for their cru Beauj, though, so it is a lot more complex than that.
Gamay in any form is a great fall wine. Put it with cranberry and roasted root veggies. Great with ham too.
