The wine is crafted from vines averaging 55 years of age planted across diverse parcels throughout the appellation on limestone and clay soils studded with the famous galets roulés—smooth river stones that absorb heat during the day and radiate it back at night—with 25-30 days of maceration followed by aging in 20% French oak barrels and 80% concrete tanks.
