Dewazakura Omachi Junmai Ginjo from Yamagata reveals delicate aromas of white peach, jasmine blossom, yuzu zest, and acacia honey with whispers of fresh basil and crushed stone. Off-dry and medium-bodied with silky, polished texture, it glides across the palate with elegant lift before finishing clean with subtle mineral notes and gentle sweetness. Serve it chilled or at room temperature through 2032. Shinichi Sato, toji in his seventies with a well-trained physique from decades of demanding brewing work, crafts this premium sake at the historic estate founded in 1892 by Seijiro Nakano in Tendo City, surrounded by mountains in the Yamagata Basin where extreme temperature swings (scorching summers above 35°C and winters with over a meter of snow) create ideal conditions for both rice cultivation and cold fermentation, and the brewery pioneered affordable ginjo sake in 1980 with their groundbreaking Oka Ginjo, triggering Japan's ginjo boom. Pair this balanced sake with pan-seared scallops topped with ginger butter where its refreshing character complements the sweet, delicate shellfish, or enjoy it alongside grilled chicken teriyaki as the sake's floral notes enhance the caramelized, savory glaze.
