COS Frappato from Terre Siciliane is a wonderfully light-bodied, organically grown red that drinks with the effortless charm of a great Cru Beaujolais, right down to its gossamer texture and irresistible freshness. It opens with enticing aromas of crushed red berry, dried rose, aged leather, and warm volcanic soil, all threaded with a lively crack of white pepper. On the palate it is fully dry, with a silky mouthfeel, vibrant acidity, and tannins so fine and composed they feel more like a gentle grip than any real structure. COS was founded in 1980 by Giambattista Cilia and Giusto Occhipinti, who remain as winemakers today, and their Frappato is fermented spontaneously with indigenous yeasts and matured in concrete tanks to preserve the grape's vivid, transparent character. COS played a pivotal role in elevating Cerasuolo di Vittoria to DOCG status in 2005, making it Sicily's first and only DOCG appellation, a recognition that cemented the winery's place as a benchmark producer on the island. Serve well chilled alongside a plate of charcuterie and sharp provolone, where the wine's peppery brightness cuts through the salt and fat with ease, or enjoy it with a simple spaghetti al pomodoro, the kind of honest, satisfying pairing this unpretentious yet deeply characterful wine was made for. Drink now through 2029.
