Château de Maligny Chablis Burgundy is a pristine, light to medium-bodied Chardonnay from the largest single estate in the Chablis appellation, pouring a clear, luminous pale gold and delivering the classic, understated elegance this storied northern Burgundy region is celebrated for, with a nose of ripe white nectarine, green apple, lemon curd, white blossom, and a signature chalky, oyster-shell mineral note that is unmistakably Chablis. It is dry and precisely structured, with a clean, taut acidity, a generous mid-palate weight drawn from 30-year-old vines on south and west-facing slopes, and a long, refreshing finish that speaks clearly of its Kimmeridgian limestone terroir. True to the house philosophy, winemaker Jean-Paul Durup ferments and ages this wine entirely in stainless steel, a deliberate commitment to preserving the pure, unadorned expression of the appellation without any influence from wood. A remarkable piece of history: the Durup family has cultivated vines in and around Chablis for fifteen generations, tracing their roots back to 1560, and Jean-Paul's father Jean famously reassembled the Château de Maligny estate from scattered parcels, rebuilding what his great-grandfather Paul Gally had once tended, turning it into the appellation's largest and one of its most respected domaines. Serve it well chilled alongside a platter of freshly shucked oysters with mignonette, where the wine's saline minerality will echo the brine of the sea in a pairing made for each other, or with steamed clams in white wine and herbs for a beautifully simple weeknight indulgence. Cellar it through the early 2030s for added complexity and depth.
