Cathedral Cellar's Triptych from Western Cape is a powerful, full-bodied red wine blending Cabernet Sauvignon, Petit Verdot and Cabernet Franc with notes of cassis leaf, wild bramble, bitter chocolate and cedar. This dry, Bordeaux-style blend displays impressive backbone and scented oak that will continue to develop over the next five years. Serve it at room temperature with roast beef as the wine's structured character stands up to the marbled meat, or pair it with slow-cooked venison ribs where the wine's concentrated fruit complements the rich, gamey flavors. Winemaker Kobus Gerber ages this fleshy blend fourteen months in oak barrels, with thirty-five percent new wood adding layers of toasted complexity while preserving the wine's generous fruit. Cathedral Cellar represents KWV's premium range, showcasing South Africa's ability to produce world-class Bordeaux-style blends at exceptional prices. This enticing, smoky wine represents outstanding quality for the price and will drink beautifully through 2031.

Food pairings: roast beef, porchetta, slow-cooked venison ribs.
