Caruso & Minini Arancino Bianco Macerato from Sicily is a textured, light to medium-bodied white offering aromas of candied tangerine, wild herbs, and hints of crushed stone. It's dry with fine tannins and vibrant acidity. Serve it well chilled with pan-fried calamari as the wine's saline character and structured finish will enhance the tender seafood beautifully, or pair it with aged sheep's milk cheese where the wine's mineral depth and persistent tannins will complement the cheese's sharp, nutty complexity perfectly. Winemaker Giovanna Caruso, who works alongside her father Stefano to lead this historic winery, crafts this organic wine from 100% Catarratto grown at 350 meters elevation on sandy soils studded with large stones. The wine undergoes 20 days of skin maceration at controlled temperatures, combining traditional red wine techniques with modern white winemaking, then ferments spontaneously with indigenous yeasts before aging in stainless steel. Founded in 2004 when Stefano Caruso joined forces with Mario Minini of Lombardy, the winery traces its roots to the late 1800s when Antonio Caruso purchased the estate to grow grapes for nearby Marsala factories. Enjoy now or cellar for 2-4 years.
