Toasty and crisp with a robust structure. Green apple brightness wrapped in a toasty blanket. Perfecto! I think about their rose, but am delighted to find this superb "white" Champagne.

Product Details: Champagne, France 12% ABV Pinot Noir, Chardonnay, Pinot Meunier

Billecart Salmon is a medium sized, family-owned Champagne house in Mareuil-sur-Ay (Ma ree soo ray. Don't worry; even the French tell me it is difficult to pronounce the name of this village just across the Marne River from Epernay.)

“Billy” is rightfully know for their fantastic Rosé Champagne, but this Brut Reserve is nothing to pass up.

Geeky tip: you have probably learned to eye, nose and taste wine. For sparkling wines, add ear. Not kidding. Before nosing raise the glass to your ear for a few seconds to listen to the fizz. Is it faint? Aggressive? Consistent? Tight? You may look goofy to some but you and I will know you are cool.

The tasting: Lovely reductive nose of biscuit and citrus. This wine has vigour and freshness. Truly elegant and concentrated with long finish. Leaves palate feeling refreshed and yearning for more.

Drink over next ten years.

Food pairing: Oysters, appetizers, citrus or green salads.

Music pairing: Fly Me To The Moon, Tony Bennett

When else to drink: In my experience, good champagne is often wasted in big groups of celebrants at events or cocktail parties. I can't really pay attention to the wine when I am busy smoozing, air-kissing and worrying about my big pores. Crack a bottle of Billy Brut Reserve with a small group of dear friends or one person you'd like to become a dear friend.
Billecart-Salmon Brut Reserve is a solid, crisp and robust Champagne. The mousse is persistent on the palate with ripe stone fruit, tropical fruit and a toasty loveliness. The cuvee blend for "Billy" is equal parts of Pinot Noir, Chardonnay and Pinot Meunier. Drink now. - Community Wine Reviews
