Bachelder Wismer-Parke Single Vineyard Pinot Noir from the Twenty Mile Bench, Niagara Escarpment V.Q.A. is a dry, medium-bodied Pinot Noir of breathtaking delicacy and precision, opening with an ethereal nose of pressed rose petal, blood orange zest, dried cranberry, warm stone and a whisper of toasted hazelnut that draws you into a silky, tensile palate threaded with chalk-laced minerality, lively red plum, wet slate and a long, finessed, iron-tinged finish that lingers beautifully. Winemaker and owner Thomas Bachelder, who was honoured with the 2025 Karl Kaiser Canadian Winemaker Award, ferments this wine using indigenous wild yeasts from the vineyard itself, a hallmark of his fiercely minimal intervention approach, and the Wismer-Parke site on its reddish magnesium and dolomitic limestone clay soils is widely regarded as one of Niagara's grand crus for Pinot Noir. Remarkably, Bachelder simultaneously crafts single-vineyard Pinot Noir and Chardonnay across three regions, Niagara, Burgundy and Oregon, making him one of the few winemakers in the world to do so at this level of quality. Serve it slightly below room temperature alongside veal chops with a wild mushroom and thyme pan sauce, where the wine's earthy depth and refined tannins will find a beautiful counterpart; it is equally lovely with a pork tenderloin glazed with cherry and rosemary, the wine's bright acidity and red fruit cutting through the richness with grace. Cellar through 2034.

Pinot Noir food pairings: veal chops, rack of lamb, pork tenderloin.
