Amabuki Shuzo has brewed sake in Saga since 1688, and this bottling leans on kimoto, a slow, labour-intensive method that predates modern brewing shortcuts. Rhododendron blossoms provide the yeast here, giving the sake real depth and richness. It's full and rounded in the mouth, built to be served chilled, at room temperature, or gently warmed. This is a sake for the table, not just the aperitif hour. Serve it with teriyaki chicken or grilled yakitori skewers.

Junmai Daiginjo Sake food pairings: slow-braised pork kakuni, miso soup with tofu, teriyaki chicken.

The Financial Times of London

There are very few people in the wine world who "get it" and Natalie is one of those who brings more fun to a buttoned-up and stodgy game.
