Allegrini Palazzo della Torre from Veneto I.G.T. is a dry, medium-bodied blend of Corvina Veronese, Corvinone, Rondinella, and Sangiovese, opening with a richly layered nose of dried black cherry, ripe plum, candied fig, clove, and a lifted thread of iris and dark chocolate. On the palate it is structured and savory, with firm yet refined tannins, vibrant acidity, and a long, velvety finish that carries notes of espresso and baking spice. Serve it at or just below room temperature, and enjoy from 2026 through 2036 as this wine has the concentration and backbone to age beautifully. Now led by Francesco Allegrini, the estate crafts this wine using a double fermentation technique first pioneered by his father Franco in 1990, in which most of the grapes are vinified fresh at harvest and then blended with a portion of partially dried grapes in January for a second fermentation, adding richness and complexity in a style often called a "baby Amarone." The vineyard itself surrounds Villa della Torre, a spectacular Renaissance-era villa in Fumane that the Allegrini family now owns, tying every bottle to more than four centuries of Valpolicella winemaking heritage. Try it with a slab of rare beef tagliata scattered with rosemary and coarse sea salt, where the wine's dark fruit and savory depth are a natural companion, or pair it with a slow-baked pork tenderloin in red wine and herbs, letting the wine's spice and dried fruit character weave through the richness of the meat.
