Kellerei Bozen Pinot Grigio from Südtirol Alto Adige in subalpine northern Italy is a dry, medium-bodied white of genuine elegance and alpine freshness, sourced from sustainably grown grapes in the gravelly alluvial soils around Bolzano and vinified entirely in temperature-controlled stainless steel tanks to preserve every nuance of the variety's naturally crisp, aromatic character. Pale straw gold in the glass, it opens with a delicate nose of white peach blossom, fresh fennel and a suggestion of toasted almond, flowing into flavours of green apple, yuzu and a savory whisper of wet slate on the palate, all carried by a lean, focused acidity and a clean, minerally finish that lingers with real precision and grace. It is bone dry and best served well chilled, drinking beautifully now through 2027. Kellerei Bozen, also known as Cantina Bolzano, is one of Alto Adige's most celebrated cooperative wineries, bringing together growers whose families have farmed these dramatic mountain vineyards for generations, and the collective's commitment to sustainable viticulture and meticulous cellar work has earned it a reputation as one of the benchmark producers of the entire appellation. Serve it alongside a baked mussel and clam casserole with garlic and white wine, where the wine's crisp minerality and focused acidity will cut through the briny richness of the shellfish beautifully, or pair it with a spring greens salad topped with sliced pear and apple and a light honey vinaigrette, letting its delicate floral aromatics and clean finish complement every fresh, bright bite.

Food pairings: grilled chicken dishes, roast duck breast in a mandarin orange glaze, salads topped with fresh steamed and chilled shrimp.
