Novaripa Novaripa Monatic Amber Pinot Grigio 2020, Terre di Chieti, Abruzzo I.G.P., Italy: From the Terre Di Chieti, Abruzzo wine region, Novaripa Monatic 2020 Pinot Grigio is an amber wine produced in the Ramato method -- a technique which involves fermenting the grapes on their skins giving the wine additional colour (amberish) texture and flavours. A great introduction to amber wine, look for ripe apple, pear, melon, herbal and citrus zest flavours with a briny mineral kiss on the finish. Grapes were harvested by hand, crushed and left to macerate up to 12 hours on their skins. The wine was fermented and aged in temperature-controlled stainless-steel tanks with occasional lees stirring. Chill and enjoy with spicy fish tacos.
