Intense nose featuring freshly cut honeycrisp apple, baked apple, and pie crust. Powerful acid and flavour, especially apple notes, while pleasant toasty bready notes come through thanks to 36 months on lees. Effervescence is lively while the bubbles are tiny, producing a rich and creamy mousse. The long finish trucks on for minutes. A top notch sparkling wine made for creamy Brie and crackers, smoked salmon, and caviar.

This lively sparkling has sour dough and golden apple notes on the nose that carry to the palate. This one demands your attention right from the slightly tart start through the pronounced but fine effervescence to the tart apple tones on the palate. Sperling Brut Reserve 2011, Okanagan Valley, British Columbia V.Q.A., Canada: A beautiful BC sparkling wine from one of Canada's most respected winemakers, Ann Sperling. The vines were planted in the 1920s, therefore yield a complex and concentrated flavour in the grapes. This blend of Pinot Noir and Chardonnay grapes is aged for 3 years to richness and depth, without having to add a dosage. Aromas of lime zest and green apple. Pair with shellfish.
