I'll take a few cases, please. Its value for quality is astounding! A superb traditional method sparkling with toasty buttered baguette, crisp apple and citrus notes. It's crisp, mouthwatering, medium-bodied and enticing. A perfect my summer bubbly to pair with salty snacks. Tasted by @sommsosa | bespoketastings.ca

Amazing value. Fresh, dry, crisp, refreshing. Well balanced, integrated alcohol. Hazelnut, Asian pear, and a hint of tart Granny Smith apple. Pair this traditional Method with your favourite appetizer, on its own or between bottles at a seasonal feast. Tasted 2010 vintage in July 2017. 91 points. BespokeTastings. South African sparkling is a great place to go for quality built wine done at a reasonable price. For a traditionally made sparkling wine that is approaching a decade old, this is great!
Nice persistent bubbles that won't die off a few minutes after opening, pretty colour that is not super oxidized and yellow yet.
It spent a decent time en tirage (cellared with the yeast to become bubbly) because of the tremendous biscuitiness evident on the nose. There's some soda cracker, biscuit, apple pie, lemon, and pineapple.
This cuvee is predominantly Chardonnay and that is totally fine by me. It has a broad body that sports a lot of yellow fruit - nectarine, yellow plum, pie apple, lemon. More lingering pineapple on the finish.
Put this alongside barbecued trout, or lobster risotto. Keep it maybe another few years and see what happens, if you can hold off on it, for now.

Cathedral Cellar Brut Sparkling 2010, Western Cape W.O., South Africa: A crisp, fresh South African sparkling wine with toasty aromas and green apple freshness. This South African bubbly was made using the Méthode Cap Classique, which is similar the Méthode Traditionnelle or the traditional method of the second fermentation in the bottle, as they do in the Champagne region. The winery's cellar is cathedral vaulted with stained glass thus the name. Pair with fresh shellfish or fried chicken. Drink: 2017-2019. 296426 12% XD 750 mL  $16.95 Score: 91/100.
