Fruit was hand-harvested October 2 at 24.3 Brix before double sorting. Destemmed and lightly crushed prior to a six day cold soak with punch downs three times daily. Fermentation ran 13 days with daily punch downs. Two days of settling after draining free run and gently pressing the skins. Aged 12 months in new and old French oak barrels without racking. Three barrel/75 case production run.

Light red colour with dried cranberry and brilliant red fruit aromas. Freshly cut roses and dried floral notes. Palate shows maraschino cherry and ripe berries leading into subtle oak spices. Gentle tannins, vibrant acidity, and a healthy medium body contribute to the elegant and balanced structure of the wine. The finish resonates with berries accented by mineral and leather. Cedar plank salmon, turkey, and ham would welcome this Pinot to the table.

Icellars 2015 Pinot Noir is light ruby in colour with a garnet hue. The aromas show the warmth of the vintage with sweet baked goods (imagine fresh gingerbread cookies), spice box, dried cherry, sweet herbs, and flinty minerality that shows the complexity of this premium Ontario Pinot Noir. Tart cherry and spice on the palate, with fine tannins and refreshing acidity providing the structure to this incredibly well balanced Pinot. Great on its own, yet the subtle texture and zesty mineral finish complement grilled salmon with fresh dill beautifully. Enjoy year round and drink 2017-2022. Tasted April 2017. 91-92 points. Bright garnet. 13 % declared ABV. Intense aromatics of baked cherry, stewed raspberry, and same on the palate with a healthy dose of old world charm, aged leather. Well balanced with moderate alcohol, deep fruit, moderate tannins and acidity. Integrating well. Pairs well with pork tenderloin, or roasted turkey and cranberry. Drinking well on its own. This is a fantastic low yield Pinot Noir showing with typicity of an Okanagan or California warmer climate Pinot Noir. Incredibly low sulphite production at 37 ppm. Tasted April 2017. 91 points.
