This Chardonnay showcases the terroir of Prince Edward County versus that of Closson Chase's Niagara offerings. Less of the tropical fruit is found here with more of a tart orchard fruit profile. There is an assertive minerality and some hay-straw character. This is a fine example of an oaked chard with some almond and toasty caramel coming through.
There is a pleasing acidity that is lively on the palate and provides a good backbone for food pairing. Buttery, seared scallops finished with lemon, toasted almonds, and fresh chives would do fine here. And just for good measure, throw in some bacon.
