A superbly complex beauty layered with toasted brioche, lemon meringue pie, and lemon curd with ginger biscuits. A delicate mousse that tickles your taste buds and a full rich generous palate that just keeps on giving. 85% of the grapes are from Grand Cru and Premier Cru vineyards. A classically styled Champagne that will be just perfect with ricotta stuffed zucchini flowers. @wrightwineblog

This non-vintage wine expresses the Bollinger style of smooth elegance and vibrancy. Its uniqueness and complexity comes from the addition of 10% reserve magnum wine – aged a minimum of 15 years. This Cuvée is a blend of 60% Pinot Noir, 25% Chardonnay, and 15% Pinot Meunier. Bollinger has been producing its Special Cuvée Champagne since 1911, and it was their British wine agent who gave Bollinger the name 'Special Cuvée', feeling that “Brut sans Année” – it’s original label – didn’t sound delicate enough for such an elegant Champagne.
The colour is light gold with small refined bubbles; on the palate, experience notes of apricot, white peach, spice, toasted walnut and brioche. A very appealing Champagne with good length, drink it on its own or with fish dishes, shrimp salad or poached lobster.

The Bollinger Champagne house was founded in 1829, and now nearly two centuries later they continue to make some of the finest Champagne that's sought all over the world. The Special Cuvée is a great wine for celebrating life's moments, big, small, impromptu, there's always an occasion to enjoy a Bolly. The nose offers the first glimpse of how complex and attractive this wine is with notes of sweet biscuit, delicate orchard fruit, toasted walnut, and hay. The palate mimics the nose with refreshing minerality and baked pastries leading the long creamy and refreshing finish. Enjoy with oysters on the half shell with green apple mignonette sauce. 92 points. Matt Steeves - www.quercusvino.ca

Bollinger always delivers and this special cuvee is no exception. Aromas of freshly baked bread, lemon zest and toasted almond. Pair with oysters.
