Relatively simple, and more appealing on the nose than the palate. Aromas of plum, cherry, raspberry, cedar, vanilla, green bell pepper, and a bit of baking spice. The fruit is more like tart cherries, cranberries, and under ripe raspberries on the palate, with some cedar, green bell pepper, and a vague woodiness coming through. Gives a bit of a coarse impression with high, tart acidity and slightly rough tannins. Medium body and length. Pair with simple and/or slightly tough cuts of red meat. Tasted January 2016.

Inviting rich dark berry and cigar box aromas tempted me to drink this wine upon opening. But after decanting for a few hours the wine improved greatly. This dry red wine paired very well with smoked and slow roasted beef. Also try with other meats.

?Year after year, the Saby family delivers complex, well-paced wine of great value. This vintage hints at the earth, with notes of cedar and dried herbs, while the lovely ripe fruit is garnished with fine notes of spice. Dry, medium-full bodied, the well-defined structure provides a fine frame for the tasty plum and black cherry fruit with notes of spice, herbs and a dash of white pepper lingering on through the extended dry finish. Drinking well now, you’ll enjoy this wine with roast beef. Vic and I both loved this. (Susan Desjardins)

Château Hauchat 2011, Fronsac, Bordeaux A.O.C., France: Ripe dark red fruit and some smoke on the nose. Juicy and tannic on the palate with a full-bodied weight. Decant 2 hours. Great price.
