Wolf Blass Grey Label Shiraz from McLaren Vale is a dry, full-bodied wine aged for 17 months in a mix of French and American oak barrels, offering concentrated aromas of plum, black currant and espresso with layers of dark chocolate, white pepper, sandalwood spice and cured olive on the palate. Serve it at room temperature with grilled ribeye steak rubbed with cracked black pepper, where the wine's supple tannins and spicy notes complement the charred meat's savoury richness, or pair it with slow-roasted leg of lamb with rosemary as the wine's lush fruit and herbal undertones echo the dish's Mediterranean flavors. Winemaker Chris Hatcher oversees this flagship wine at Wolf Blass, a winery founded in 1966 by Wolfgang Blass, a German immigrant who revolutionized Australian winemaking by introducing bold, oak-aged styles that became synonymous with premium Australian wine. This generous, richly flavored Shiraz can be enjoyed now or cellared until 2031 as its complex layers continue to integrate and evolve.
