Wines of Adam F&F Macedonia Malagouzia is an alluring, medium-bodied white from one of northern Greece's most quietly celebrated organic micro-wineries, unfurling a heady bouquet of white nectarine, ripe melon, pink grapefruit zest, jasmine blossom, and a delicate thread of fresh-cut herbs on the nose. It is dry and vibrantly structured, with a lively, mouth-cleansing acidity and a silky, generous mid-palate that speaks clearly of its low-yield schist soils on the sunlit slopes of Mount Hortiatis near Thessaloniki. Winemaker Wines of Adam crafts this 100% Malagouzia with careful cold pre-fermentation maceration followed by temperature-controlled fermentation in stainless steel, a minimal-intervention approach designed to let the grape's naturally expressive aromatics take centre stage. An intriguing footnote to this wine is that Malagouzia itself was rescued from near-extinction in the 1970s when only three surviving vines were passed from a professor of oenology to a promising student, a chance encounter that effectively saved one of Greece's most beguiling white grape varieties from disappearing entirely. Serve it well chilled alongside herb-crusted roasted chicken thighs, where the wine's floral lift and citrus freshness cut beautifully through the richness, or enjoy it with a chilled Greek salad of tomato, cucumber, and creamy feta on a warm evening for a perfectly matched seasonal pairing.
