Whatever happened to inexpensive Chablis at this village level but the reality is you get what you pay for and $39 buys you one of the most proper and well-orchestrated Chablis on the market today. Bit of lemon drop oil [on] the nose, which is of course a nice way to delve deep into citrus and limestone chalky Chablis. Less of that mineral here because, well fruit and this is the dictionary entry for high-level AOC. Still a Fèvre is a Fèvre that will treat you right. Liking 2023, that much is clear. Drink 2025-2028. Tasted April 2025. (Michael Godel,winealign.com) MINE: William Fèvre Champs Royaux 2023 is a beautifully balanced Chablis, offering a fresh and floral nose with ripe apple, tropical fruit, zesty citrus, and a hint of flinty minerality. The wine is dry, medium-bodied, and mouth-watering, with 5% of the wine aged in neutral oak barrels, adding depth to the stainless-steel-fermented majority. It’s crisp and elegant, with bright acidity that pairs wonderfully with seafood and grilled shellfish. A delightful wine to enjoy through 2028. NEW: William Fèvre has farmed Chablis for generations, and Champs Royaux is the estate's classic, entry-level expression. White peach and a hint of honeysuckle define the nose, a chalky snap, tucked in behind. Crisp and precise, length carries through the finish. Pair it with oysters or mussels Portuguese.
