A grassy, herbal Chilean Sauvignon Blanc with notes of fresh straw, hay, grass, white melon and lime. Lots of racy acidity for shellfish.

William Cole Mirador Selection (2016) is a well-priced, dry and medium-bodied Sauvignon Blanc from the Casablanca Valley in Chile. Notes of cut grass, asparagus, green pepper and green peas are on the nose and palate and the wine finishes off with a zesty acidity. The Humboldt Current in the Pacific ocean creates cool ocean breezes and fogs which afford Casablanca with an ideal cool-climate growing region. In turn, the growing and ripening period is extend and provides wine grapes with a long and even ripening period to develop complexity and wine grape flavours. - Community Wine Reviews
