Wapisa Cabernet Sauvignon from San Javier, Río Negro, Patagonia is a medium-to-full-bodied, bone-dry red with aromas of dark plum, dried blackcurrant, pencil shavings, and a cool herbal breath off the Atlantic. On the palate it's concentrated and chewy, with layers of black cherry, dark cocoa, a hint of cedar, and a clean saline edge on the finish that sets it apart from any landlocked Cabernet you've tasted. Winemaker Fabián Valenzuela crafts this wine in collaboration with legendary consulting winemaker Jean-Claude Berrouet, the man who made Petrus for 44 consecutive vintages, working from Wapisa's coastal vineyard just 25 kilometres from the South Atlantic. Owner Patricia Ortiz, a former medical doctor turned one of Argentina's most decorated wine producers, was the first woman to serve as president of Bodegas de Argentina. Drink it now through 2030. Pour it alongside BBQ beef long ribs, where the wine's dark fruit and firm structure stand up to the smoke and char, or try it with a tourtière, where the spiced meat filling and buttery pastry bring out the wine's cedar and cocoa notes beautifully.
