Wakefield Jaraman Pinot Noir is an elegant, cross-regional blend that marries cool-climate fruit from the Adelaide Hills with the windswept, maritime-influenced vineyards of Tasmania, a sourcing strategy that speaks to the restless curiosity of winemaker Adam Eggins, who has crafted wines at Wakefield since 2000 and was named Australian Winemaker of the Year by Winestate magazine in 2006. Poured into the glass, it reveals a translucent ruby hue with an alluring perfume of red cherry compote, dried rose petal and a delicate thread of cedar, underpinned by subtle earthiness. It is light to medium-bodied and dry, with lifted acidity and silky tannins softened by eight months in seasoned French oak, giving the wine a fluid, graceful texture without masking the fruit. A notably distinctive trivia about Wakefield is that on the very day Bill Taylor Senior purchased his Clare Valley vineyard in 1969, Neil Armstrong took his first steps on the moon, and the family has been marking history ever since, earning recognition as one of the Most Awarded Wineries in the World by the World Ranking of Wines and Spirits in 2017. Best served lightly chilled, it will drink well through 2029. Pour it alongside a pan-seared salmon fillet with a lemon butter caper sauce, where the wine's bright acidity echoes the richness of the fish, or try it with a roasted duck breast served with a cherry and red wine reduction for a pairing that is nothing short of a love story.

Pinot Noir food pairings: pan-seared salmon with lemon butter caper sauce, roasted duck breast with cherry red wine reduction, mushroom risotto with fresh thyme.
