Brian Schmidt has made wine at Vineland Estates for decades, farming the Beamsville Bench's limestone-streaked slopes on the Niagara Escarpment. White nectarine shows up first, honeydew and a soft ginger spice filling in behind it. No oak gets in the way here, just clean, direct fruit carrying all the way through a round, juicy finish. This is Chardonnay at its most unfiltered, tasting like the vineyard rather than the barrel. Serve it with grilled shrimp or a simple roast chicken.

Chardonnay food pairings: Roast chicken with tarragon, pan-seared trout with almonds, goat cheese and leek tart, summer corn salad.
