Cabernet Franc has become something of an Ontario calling card, and Vineland Estates farms it on the Beamsville Bench's limestone-rich soil. Black olive shows up first, clove and warm cedar filling in behind it. Firm tannins give the wine real structure, built to stand up to serious food. This is Ontario red with genuine backbone and depth. Serve it with grilled sausages or a wedge of aged cheddar.

Cabernet Franc food pairings: Roast duck with cherry reduction, lamb chops with herbs, aged cheddar with quince, mushroom and lentil flatbread.
