Tyrrell's Hunter Valley Shiraz offers vibrant aromas of red cherry, crushed pepper and hints of dried herbs. It's dry and medium-bodied with a silky texture. Serve it lightly chilled with herb-roasted turkey breast where the wine's bright acidity balances the meat while its earthy character complements the savory seasonings, or drink it now through early 2030s. Fifth-generation winemaker Chris Tyrrell crafts this wine from 40-year-old vines at the family's Ashmans estate, founded in 1858 by English immigrant Edward Tyrrell, who planted the first vines that established the Hunter Valley as one of Australia's greatest wine regions. The winery's Vat 1 Semillon holds the distinction of being Australia's most-awarded white wine with nearly 5,500 medals and over 330 trophies. This versatile wine also pairs beautifully with mushroom risotto finished with thyme and Parmesan, where the wine's forest floor notes echo the fungi while its fresh acidity cuts through the dish's creamy richness.

Shiraz food pairings: roast shoulder of lamb, veal chops, turkey, duck.
