Trinity Hill 2021 is a dry, medium-plus bodied, savoury and smoky Syrah, fragrant with dark plum, blueberry, olive and nutty flavours satin-silky and supple on the palate. Elegant and complex, enjoy it through 2031.

Syrah food pairings: grilled pork chops, rare roast beef, burgers with blue cheese, spice-braised lamb, Muscovy duck.

Deep purple red wine from New Zealands Gimblett Gravels. The wine has a pronounced aroma, leading with dark fruit, primarily black plum and black currant. There is also black pepper, black olive, a floral note (like rose) and a pleasant savoury note. The wine is dry, with medium acidity, medium tannin and medium plus body. Paired very well with beef steak and mushroom pot pie; the food brought out the fruity notes more while also good with Rabel Iberico cheese; this emphasized the black olive and floral notes. While pleasant to drink on its own, pairing with the right food elevates the experience.
