Tornatore Valdemone Extra Dry Rosato Spumante Nerello Mascalese is a beguiling, pale-crimson sparkling rosé from one of Sicily's most storied and ambitious estates, nestled on the northern slopes of Mount Etna at altitudes reaching 1,000 metres above sea level, where ancient volcanic soils born of lava, ash and centuries of eruption give the wines their unmistakable mineral soul. This sparkling wine is made using the Charmat method, with hand-harvested Nerello Mascalese grapes vinified in stainless steel before secondary fermentation in pressurised tanks, capturing fine, persistent bubbles and preserving the grape's delicate aromatic purity. The Tornatore family's winemaking roots stretch back to 1865, when the great-grandfather of current proprietor Giuseppe Tornatore began farming this extraordinary volcanic terrain, and the estate has played a meaningful role in drawing global attention to Etna as one of the world's most thrilling wine regions. The nose is refined and inviting, with dried wild strawberry, fresh pomegranate and a thread of pink peony blossom, while the palate is light-bodied and lively, carrying a creamy mousse, bright acidity and a clean, fruit-lifted finish with a characteristic saline mineral edge from the volcanic terroir. Serve it well chilled as an aperitif or throughout a light meal. It is wonderful alongside a salmon tartare with cucumber and lemon crème fraîche, where the wine's floral lift and zesty freshness are a natural match, or serve it with a platter of prosciutto and fresh figs for an effortlessly elegant opening to any table.
