Thompson Steer Limestone Coast Shiraz from South Australia is a rich, full-bodied red showcasing aromas of ripe mulberry, dark chocolate, and cracked black pepper. It's dry with velvety tannins and generous fruit concentration. Serve it slightly below room temperature with grilled ribeye steak as the wine's bold structure and peppery notes will stand up beautifully to the charred, savory flavors, or pair it with slow-braised beef short ribs where the wine's depth and smooth texture will melt into the tender meat and rich sauce. Thompson Steer sources fruit from vineyards planted on the famous Terra Rossa soils of the Limestone Coast, the distinctive red clay formed over centuries as iron oxide weathered the region's ancient limestone bedrock. Established in 1990 near the country town of Mundulla, the winery takes its name from the meandering lakes and adjoining fields that surround the estate vineyards. Enjoy now or cellar for 5-7 years.

Shiraz food pairings: grilled ribeye steak, braised beef short ribs, venison medallions.
