The Organized Crime Beamsville Bench Ontario Sacrilege White is a wonderfully unconventional, medium-bodied white blend that lives up to its mischievous name, weaving together Sauvignon Blanc, Pinot Gris, and Riesling from the estate's cool hilltop vines into something altogether more interesting than any of its parts alone. The nose delivers a bright, enticing mix of fresh lime zest, white peach, green apple, and a whisper of dried wildflowers, while the palate is generous and lush, carrying a pleasing weight and roundness that flows seamlessly through to a clean, flinty mineral finish. Winemaker Greg Yemen, who tends the vines alongside second-generation owners Ania de Duleba and Edward Zaski on their 40-acre Beamsville Bench estate, has given the Sacrilege series creative latitude to push past convention, and this three-variety blend is a confident expression of that spirit. The winery's wonderfully eccentric name itself comes from a local nineteenth-century incident in which one feuding Mennonite congregation broke into a rival church and hurled a disputed pipe organ down an embankment, making the "Sacrilege" label a perfectly fitting tribute to boundary-breaking. Serve it well chilled alongside a summer platter of cold shrimp with avocado and lime, where its citrus brightness and juicy texture will play off the dish beautifully, or with a fresh goat cheese and herb tart for an easy, crowd-pleasing pairing. Drink it over the next one to two years while its lively freshness is at its peak.
