The Organized Crime Break-In Pinot Noir showcases bright red fruit with notes of cranberry, wild rose and forest floor. It's dry, light-to-medium bodied and silky in texture. Serve it lightly chilled with pan-seared veal cutlets where the wine's delicate structure and fresh acidity enhance the tender meat, or age it through 2031. Winemaker Greg Yemen crafts this Pinot Noir at the family-owned estate on Beamsville Bench, a winery named after an early 1900s feud between two Mennonite congregations who disagreed about acquiring a pipe organ—the conservative group broke into the other church, stole the organ, and tossed it down an embankment. This versatile wine also pairs beautifully with earthy mushroom risotto, where its subtle woodland character complements the fungi while the wine's vibrant acidity balances the dish's creamy richness.
