The Hedonist Cabernet Sauvignon from the sun-drenched Willunga foothills of McLaren Vale is a vegan-friendly, sustainably grown red that opens with inviting aromas of ripe plum, dried sage and a whisper of cedar, giving way to a medium-plus-bodied palate with supple, chalky tannins, a hint of dark olive and warm baking spice threading through to a clean, lingering finish. It is dry, beautifully balanced and built for the table, so serve it slightly below room temperature and enjoy now or cellar through 2033. The winemaking trio of veteran Walter Clappis alongside his daughter Kimberly Cooter and her partner James Cooter bring both old-world discipline and fresh-generation energy to every bottle. Impressively, Walter is the only winemaker in McLaren Vale ever to have won the prestigious Dan Murphy Trophy three times, and a Hedonist Shiraz once claimed the George Mackey Memorial Trophy as Australia's best exported wine, chosen from over 14,500 entries. Pair it with a slow-braised lamb shoulder with roasted garlic and rosemary, where the wine's earthy depth mirrors the richness of the meat, or try it alongside a grilled bison burger topped with aged cheddar and caramelized onions for a bold, crowd-pleasing match.
