A bright and zesty sparkling single-vineyard Riesling from the Twenty Mile Bench, Niagara Escarpment wine region. Tawse Spark Limestone Ridge is made in the traditional method, Pronounced lemon curd and biscuit aromas, bright and crisp on the palate with crunchy green apple, honey and lemon zest flavours finishing with some mineral notes. Very nice with fish and chips, calamari and popcorn shrimp.

Organic Sparkling Riesling food pairings: sautéed deep sea scallops, seafood salads, sushi.

Already concentrated notes of petrol, bruised apple, and lemon are redoubled in potency by the addition of bubbles via the traditional method, which also adds some hints of yeast. Dry with great acidity. The apple and lemon flavours are joined by peach and subtle tropical notes, while the finish is dominated by more petrol. An interesting combination of hot vintage Riesling and the traditional method. Well suited to sushi and sashimi, bacon-wrapped scallops, and lobster mac and cheese.
From the Niagara Escarpment Wine Region Tawse Spark Limestone Ridge 2016 is an organic and traditional method sparkling Riesling. Fresh and zesty. Chill and enjoy on its own or with all things seafood. - Community Wine Reviews
