Tapiz Alta Collection San Pablo Vineyard Malbec is a dry, medium-plus-bodied Malbec from one of the Uco Valley's highest and most compelling single-estate sites, pouring a deep violet-ruby and opening with an alluring, perfumed nose of macerated black damson, dried blueberry and wild iris, layered with fresh mountain thyme, toasted clove and a fine thread of iron-rich mineral that speaks directly to the alluvial soils at 1,400 metres elevation. The palate is vibrant and precisely etched, with silky, fine-grained tannins and a chiselled acidity that gives the wine impressive energy and lift, carrying through to a long, focused finish with a lick of cracked pepper and woodsmoke from its twelve months in French and American oak. Serve it slightly below room temperature and enjoy from now through 2031. Chief winemaker Fabián Valenzuela crafts this wine alongside legendary consulting winemaker Jean-Claude Berrouet, who spent 44 consecutive vintages as the winemaker at Château Pétrus in Bordeaux, bringing an extraordinary pedigree to what is already one of Argentina's most distinctive high-altitude terroirs. Owner Patricia Ortiz, a former medical doctor turned wine visionary who became the first female president of Bodegas de Argentina, was also instrumental in establishing San Pablo's own Geographical Indication status, cementing this corner of the Uco Valley as one of Argentina's most exciting wine destinations. Try this alongside a slow-roasted pork loin stuffed with prunes and sherry, where the wine's dark fruit precision and peppery lift are a perfectly refined match, or pair it with a pork shoulder braised with roasted vegetables and apple cider for a richly satisfying weekend dinner.
