Sho Chiku Bai Jyosen from Fushimi, Kyoto, opens with delicate aromas of toasted rice, white peach, and subtle floral notes with whispers of almond and fresh cream. Dry and light to medium-bodied with a smooth, velvety texture, it flows across the palate with gentle umami character and finishes with a crisp, clean edge. Serve it chilled or gently warmed through 2027. The skilled toji team at Takara Shuzo, founded in 1842, crafts this traditional sake using the proprietary Kuratsuki Hanbei yeast strain that imparts distinctive mellow richness and depth of rice flavor, brewed with the celebrated Fushimizu spring water from Fushimi renowned for its semi-hard mineral content that creates the silky smoothness characteristic of Kyoto sake. Pair this versatile sake with grilled mackerel where its clean finish cuts through the fish's natural oils, or enjoy it alongside nigiri and sashimi as the sake's subtle sweetness enhances the delicate flavors of raw fish.
