San Silvestro Patres Barolo D.O.C.G. from Piedmont is a full-bodied, 100% Nebbiolo aged in large Slavonian oak casks followed aging in tank and in bottle before release, a patient process that the Sartirano family has been practising in one form or another since Giovanni Sartirano first produced wine in the Langhe in 1871. On the nose it's classic Barolo: dried pomegranate, tar, pressed rose petal, and layered with a thread of dried herbs. The palate is powerful and precise, with tart cranberry, graphite minerality, warm clove, and a long, dry finish with firm, structured tannins that make it clear this wine is in no rush. Brothers Paolo and Guido Sartirano, the fourth generation, run the estate from Novello in the heart of the Barolo district and hold the Equalitas certification for sustainably farmed vineyards. Cellar it through 2038 and serve it with prime rib roast or rack of lamb, where the wine's iron-tinged depth and firm tannins are a match the Langhe has been perfecting for over a century.
