Saint-Roch's Corbarol from Côtes du Roussillon is a dry, full-bodied white blend of old vine Grenache Blanc and Roussanne, pouring a pale lemon with glinting lime-green reflections and offering an inviting bouquet of beeswax, dried apricot, crushed oyster shell, warm brioche, and a whisper of saffron on the lingering finish. It's generously textured with a creamy, rounded mouthfeel and a streak of stony, sun-warmed minerality that gives the wine a wonderful sense of purpose and place. Saint-Roch is a historic estate rooted in the sun-baked terroir of Roussillon, a region tucked between the Pyrenees and the Mediterranean that produces some of southern France's most characterful and underappreciated white wines. This wine was awarded a Gold medal at the prestigious Concours Général Agricole de Paris 2026, one of France's oldest and most respected wine competitions. Serve it at room temperature alongside a butternut squash risotto finished with sage and Parmesan, where the wine's nutty richness and fruity warmth create a seamless and satisfying pairing, or try it with a lemon herbed roast chicken, where the wine's stony brightness and creamy texture mirror the dish's golden, aromatic character beautifully. It will reward cellaring through 2032.
